In this 28-37 class period bundle, students unpack 5 phenomena to explore flavor and foundational chemistry concepts.
This unit is intended to be used for introductory high school chemistry classes.
Students are introduced to atomic structure, formation of ions, ionic compounds and ionic bonds, and covalent bonds and molecular compounds through phenomena that include table salt, sports drinks, sugar, and other salts and MSG.
Science practices are heavily emphasized and include developing models, asking questions, analyzing and interpreting data, engaging in arguments from evidence, and obtaining, evaluating, and communicating information.
Phenomenon 1: Salt: Matter, Properties, & Separation Methods (8-10 days)
Explore how salt is extracted and made, how and why different types of salt vary, and salt’s purpose in food and cooking.
Phenomenon 2: Sports Drinks & Electrolytes: Atomic Structure & Ions (8-10 days)
Explore atomic structure and ions by unpacking what electrolytes are, why we need them, and why they are in sports drinks.
Phenomenon 3: Sugar (Rock Candy & Tanghulu): Solutions & Covalent Bonding (3-4 days)
Explore sugar and sugar solutions by comparing salt and sugar’s macroscopic properties and making sense of differences by exploring sucrose’s molecular structure and how its atoms are bonded.
Phenomenon 4: Salts & Umami (7-10 days)
Explore ionic compounds- how they form, why they form, and their properties- by making sense of ingredient labels and exploring a primary ingredient behind umami: MSG.
Unit Assessment: Oral Rehydration Salts (3-4 days)
Each Lesson Includes:

Resources are shared as view-only folders in Google Drive. Classroom slides and student handouts can be downloaded, copied, and adapted for personal teacher use.
